Winemaker Notes:
JackSon Red is 100% Marechal Foch from our vineyards and each bottling is one vintage so Jack Son Red is an estate wine. We produce 800 cases annually. JackSon is a dry wine produced to emphasize fruitiness in a very soft wine that is lighter than Barn Dance Red. The yeast strain helps develop fruit aromas and is used in Pinot Noir production. JackSon is produced entirely in stainless tanks. Skin contact is less than 5 days and total production time including malo-lactic fermentation is less than 4 months. Alcohol content is 12. 3%. Low titratable acidity (< 7 g/l) is responsible for softness. I changed the style of JackSon Red three years ago and the result has been increased sales and 2 Gold medals.
