Winemaker Notes:
Catawba Sweet Reserve is a true late harvest wine made from 100% Catawba grapes from our vineyards. The grapes are not harvested until about 10 days after the killing frost. During this time the grapes desiccate on the vine and become very raisin-like. This is a nature process that removes more than 30% of the water from the grapes resulting in a concentration of the fruit flavors, color, and the acids and sugars produced by the grapes. It also means that there is a 30% reduction in the wine produced from these grapes. The concentrated, luscious flavors of Catawba Sweet Reserve explode in your mouth. Catawba Sweet Reserve has a TA of 13 g/l that is well-balance by its 8% residual sweetness and 11.8% alcohol. We bottle Catawba Sweet Reserve in 375 ml bottles because it is a wine to be served in small portions. Producing a late harvest wine from Catawba grapes is a value-added process that we can do consistently every year in Iowa unlike trying to produce ice wines. Catawba Sweet Reserve was the Tabor Home Winerys first wine to win a Gold medal in 1999 and again won Gold medals in 2006 and 2007.
